As more people avoid eating gluten, the United States and other countries have created more and more gluten free foods. However, in Ecuador, gluten free options are almost nonexistent. So, our family has experimented with some different foods we can make at home for my sister, who is gluten free. Most important, in my mind, was how we were going to make pizza if my sister was gluten free. Here is a gluten free pizza alternative that is easy to make:
In Ecuador there is an abundance of fruit. So the first gluten free pizza recipe we tried was an eggplant pizza crust. I am not a fan of eggplant, but even I enjoyed this recipe. My sister says it is more of a bruschetta than a pizza. So here it is:
½ lb. ground pork with salt and pepper (of course)
1 tomato, chopped
1 onion, chopped and grilled
Whatever other vegetables or fruits you want
3 oz. tomato paste
Cut the eggplant lengthwise with a thickness of about ½ inch (about 1 cm). Put olive oil into a pan. Saute the slices of eggplant about 3 minutes on each side, until slightly brown.
Combine the cooked pork, tomato, grilled onions and the tomato paste in a small bowl creating a chunky sauce. Spread a dollop of the sauce on the slices of eggplant and top with cheese. Put into the oven on 350° F (175° C) until the cheese melts about 5-7 minutes.
Serve and enjoy!
For vegetarians you can omit the pork and voila! a vegetarian meal.
When we first made this recipe, we cut the eggplant crosswise which we made work. But cutting it lengthwise gives you more space to work with. The reason I suggest combining all the ingredients into one bowl is because then you can drop a spoonful of it onto the eggplant without making a mess. Otherwise, putting each individual ingredient is difficult and, at least for me, the ingredients all roll off. Also, even though tradition has it that the cheese goes on the bottom, putting the cheese on top in this case makes all the ingredients stay in place.
From cooking the ground pork all the way to eating the actual pizza takes about an hour. This recipe really allows you to have fun with it; make it what you want and be creative. Add any vegetable or fruit you want. We sauteed green peppers as well as onions. You can add salt and pepper to your pork and any other spices. We added garlic powder. Of course, this will be different from a pizza with a bread crust. But it still tastes great. As my sister said about it, “Yeah, it’s fine. It tastes good, but it is more of a replacement for a bruschetta.”
